The International Association of Conference Centres (IACC) has awarded Sundial Group sous chef Rob Budd the accolade of UK Conference Centre Chef of the Year following its Copper Skillet Competition, which took place at the Royal College of Physicians in London.
The three winners were: Rob Budd from Sundial Group in first place; Cristian Dumitru from Fare of London in second place; and in third place was Michiel Boereboom from De Vere Venues.
Also competing were runners up Dean Robinson from the Royal College of Physicians and Graham Edwards from the University of Warwick.
IACC says its Copper Skillet event is part of its commitment to sustaining the highest global standards of customer service and facilities. The competition was introduced in 2004 to highlight the artistry and skills of IACC-member conference centre chefs from around the world.
This year the competition involved a time limited chef challenge whereby participants had to produce a single dish from a mystery basket of ingredients comprising fresh produce, grains and three proteins. Chefs were given 30 minutes to create a dish suitable for service in a conference centre setting.
Budd’s dish took first place on the judge’s criteria of taste, texture, optimum use of ingredients and presentation, as assessed by judge Peter Griffiths MBE, President of Salon Culinaire, assisted by Executive Chef Fergus Martin.
Budd will go on to represent Sundial Group and IACC Europe’s UK members at the international championships in Los Angeles, USA, in March 2014.
“I always enjoy being involved in the organisation of the Copper Skillet competition,” says IACC Europe Board Member and organiser of the UK Copper Skillet competition, Richard Kinder from Fare of London. “This year the calibre of the contestants was phenomenal. We look forward to the international competition in LA and have our fingers crossed for Rob who will be flying the flag for the UK.”
